I Think I am in Love

Is it all right to have a love affair with salsa??  This year I expanded my horizons and made a batch of homemade salsa.  Yum does not even come close to the way I would like to describe it.  The smell, the taste, the memories…wow.  I don’t even know where to start. 

My parents were avid salsa makers when I was younger.  My dad LOVES chips and salsa.  Especially the really chunky stuff.  They would stew it for hours trying to get it to the right consistency.  Then while they were bottling it dad would basically pour himself a glass and start drinking the salsa.  VERY weird in a child’s view, but as I discovered this past week, the apple didn’t fall very far from the tree.

I survived making my first batch, which was actually a lot easier than I anticipated.  Then dumb Alicia realized that she didn’t have any tortilla chips.  So there I was drinking the salsa out of the measuring cup….WOW!!  I can’t believe I missed out on this for the last decade.  AMAZING.

I sent a jar over for dad, to thank him for tomatoes.  I must have done something right, since he came over to request more salsa.  Luckily I had saved a few tomatoes, and was trying to work out making another batch.  The only thing I would change is that I need to find a recipe for actually bottling the salsa.  The recipe I was using isn’t approved by the USU Extension Service, so I ended up freezing it, which is fine, but in case I don’t have freezer space in the future I would like to bottle it.  If anyone has a good bottling recipe let me know!
